Volcanic Slopes Vineyards produces just one wine: Pure, a 100% Assyrtiko from very old (200+ years) vines on Santorini. The project of Manolis Chloridis and Matthew Argyros, it is based in a restored old canava - a traditional wine cellar. As the name suggests, the wine is made with purity in mind. The result is a concentrated, focused and, yes, pure Assyrtiko with mouthwatering freshness and great depth. Although it's a relatively new project it is immediately one of the finest wines on the island. It can be drunk on release or cellared for at least ten years.
