Peggy Buronfosse started her Jura estate with 0.4 hectares of Chardonnay in 2001. Farming is all organic and the vineyards are partly ploughed by horse. This Varron Chardonnay is from vines planted in the 1950s. Fermented with wild yeasts and made in a topped-up style, this is a striking example of how characterful and complex Jura Chardonnay can be in the right hands.
